Let’s see. According to my records, Wednesday is Tip Day. (As in helpful hints, not monetary compensation.) (Although…) (Nah, forget it.) Now I’m the first to tell you I don’t hand out tips wily nily, other than “Don’t Smile at a Crocodile,” or “Don’t Wear Granny Underwear with Low-Rise Jeans.” (Wish I had taken THAT advice yesterday.) However, every now and then I do find I have something useful to share, which you might find delightful and awesome.
Today it’s a recipe. My tip? MAKE IT.
*******************************
Lentil Mash
Saute some garlic, chopped onions and shredded carrots.
Add 2, 3 or 4 cups of cooked lentils (I use Trader Joe’s pre-cooked lentils available in the refrigerator case)
Add one can of diced tomatoes.
Salt and pepper to taste.
Let simmer.
Have it as a side dish or over brown rice.

You didn’t want measurements and stuff, did you?
I really hope not. I’m the kind of person who dices vegetables in the palm of her hand and uses wine glasses as measuring cups.
Enjoy!

My wife likes using lentils in soups and things, I’m a tad suspicious though, the little buggers are full of evil and clearly have powerful ambition, I’m afraid of them.

Oooh, I like this! Trying not to eat so much meat and lentils are nice and filling. Thanks!

Yum. I’ll bite!

You DO NOT dice vegetables in your hand! Measuring in wine glasses makes perfect sense but knives & skin = bad combination.
I have a quiet love for lentils; thank you for this idea. :)
